2 reasons for holding that long - the buyer wants a carcass weight of around 600 pounds and it takes that long to get that big. Other reason is that they put the fat on (finish) more easily at that age, particularly the steers. Heifers will fatten easier / earlier but steers need longer. You can do it at a younger age is you have really good grass more year round but most of us have a 'season' when they have more finishing type of grass available. I can do it in the summer with summer annuals but this is more expensive for me so I don't plant a lot of that.
