grass fed beef

The beef I butcher doesn't get too much grain. Maybe 5 lbs of cracked corn/DDG in the last month or so before butchering. Last steer I butchered was a long 2 yr old, almost 3. He weighed 1600 lbs and hadn't had much grain. Usually graze my beef through the winter on dry hard grass or being fed the best mostly grass hay. Dad always said to avoid butchering a beef while the grass was green because it would taste "washy".
