Try coating that pork chop or chicken breast with olive oil before you grill it. Keeps the outside from getting like leather. I don't mind some fat in my pork chops or beef, but most people I know will trim every last little bit of fat off a pork chop before eating it. I'd rather spend that time eating my second pork chop...
