I think alot of people would agree with you on the flavor but overall the domestic market is after the lean hogs.  I think most if not all of Cargill's outdoor pigs get exported and I'm sure the people at Cargill would be going after the domestic market with those pigs if it was profitable.  I guess the other thing to consider is I'm sure the lean hog is cheaper to raise per pound of meat sold so that's probably part of the reason pork has gotten so lean.
