I thought it was carbs. Something is going to get us all no matter how hard we try.

It’s CALORIES. Carbs, Fat, Protein all of which are energy sources. It is easy to eat too many carbs as they don’t provide satiety (the lack of hunger). The other two will.

When you body lacks sufficient carbs from diet it will attempt to use all of its stored carbs before burning fat. If you eat fats while getting enough carbs the fats will be stored for later use. If you eat too many carbs the extra will be stored as fat for later use.

Once all of your stored carbs are used the body will switched to breaking down the fats. This process produces ketones which MOST cells in the body can use as an alternative power source. The brain can NOT run on carbs so a minute amount of carbs will always be produced by the liver in the exact minimum amount the brain needs to function.

It is possible to get fat on a keto diet if you eat too much fat. It’s just not EASY as you will feel full before you over eat when consuming mostly fats. You have to really work at it to eat too many fats once your body is burning mostly ketones for energy.
