Pittsburg, Kansas | He may not have said but there is a lag between consumption and when the damage becomes manifest enough to show up in diagnosis of problems. It is a matter of causing long term low levels of inflammation rather than a chronic inflammation such as from a cut or injury.
Kills slow instead of fast. Diabetes is the same way. Often a person is heading for trouble 10-20 years before the diabetic diagnosis is manifest. That is why a fasting insulin assay blood test will give a person warning long before blood glucose goes out of range and the doctor makes the diagnosis.
Not everyone in the low carb community makes the case that vegetable oils are the only or main problem. My guess is that both vegetable oils AND excessive consumption of sugar and starchy seeds/vegetables are both contributory. Wife and I have cut most of both out of our diet (going on 5 years now) and we both have seen great health improvements. Losing extra weight was just a side benefit.
