The amount we eat can certainly come into play. But I think the modern problem is more how often we eat.

The hormone insulin is the main key to weight gain. Yes, calories also have to be adequate to gain weight. But high insulin is what tells the cells in the body there is excess energy and to store the excess as fat for later energy usage.

Eating too often with foods that raise insulin prevents body fat from being utilized and shunts current energy consumption to fat storage.

Eating or drinking carbohydrates frequently all day long keeps insulin elevated all day long. Years of this high insulin levels causes insulin resistance, causing the pancreas to put out even higher levels of insulin to take care of the excess glucose in the blood. High blood glucose levels are damaging to the circulatory system and many organs in the body.

Society in general doesn't eat 3 square meals any more. Snacks in between meals or sipping on a sweet drink all day long is a recipe for keeping insulin high, for for eventual insulin resistance, metabolic poor health, and weight gain.

It is more like we eat 5, 6 or 10 meals a day according to what our pancreas sees and how our hormone insulin is excreted.

Insulin management is the key to fat weight loss. The way to lower insulin, thus utilizing body fat for energy, is to eat less often (giving time between meals for insulin levels to naturally drop) and/or stop or reduce eating the foods that raise insulin. Carbohydrates raise insulin. Or a person can reduce calories enough but that method will trigger hunger and a lot of willpower comes into play.
