Sounds like more work than necessary but I understand wanting to try it. Why not harvest 30” corn how you see fit (combine, ear corn, earlage) then graze stalks. Once stalks are grazed then plant a cover crop.

Grazing stalks is saving me $115 ($75 alfalfa, $40 average hay) week in hay for 15 cows. Can also sell that $75 of alfalfa hay vs using it so more like $195/week? That adds up quick.
