Soybeans chopped for forage will have decent protein levels, but they are rather high in fiber - lots of lignin - and the forage does not test out well.  It would be okay for feeding beef cattle, and probably dairy heifers,  but not for high- producing dairy cows.  If your dairy guys are used to RFV's of 180 in forages, they will be dissappointed with soybean silage. 

Frankly,  if you can grow 120-day corn, I don't see why you can't grow soybeans - especially if you can put the water on.

I think it's just a matter of you knowing what you need to do, so you don't make any unnecessary mistakes.  And asking questions here is the best way to minimize that risk.

P.S.  If your dairy cows want to feed to beans directly, they should be roasted.
