While thinking about dairy & cows, you might consider dairy goats.
Last I heard goat milk was selling in the $35 range. I have no idea what goat milk is selling for now.

The average lifespan of a goat farm is 3 years. The labor costs are incredible. It takes 6 overactive, inquisitive, half crazed animals to equal 1 calm and content old bossy...Then when they kid you have 1.5 little ones per mama to ride herd over.
Then to top it off I believe demand has been a bit off lately. Seen a lot of folks selling out because they lost their contract in the last year......
