we sell 5 to 10 head a year this way.  we keep track of hay and corn.  also add in bedding and trasport to and from butcher and cost of animal when we bought it.  We total all of our inputs and assign the cost of production of each and then add 10% to it.  we do not add anything to the processing.  i have worked in sales for years and i guess i have the midset of what you pay for something plus your margin.  I suppose we should also deduct the value of the manure but that may be a little over the top. usually falls in the $2 to $2.75 range including butcher at a usda inspected plant.  im not sure if it is enough sometimes because there can be some headaches.
