New Mexico | of cattle ever graded by the usda as "Choice" Quality Grade and "0" Yield Grade was a long, long time ago.
Those were at the Great Western Beef Expo in Akron CO in the early 80's.
Cattle were Pied Cross ( by a bull neamed Captain ) out of Char/Maine/Herf dams.
Cattle weighed approx 1,190, had 14 inch Ribeyes etc.
DP on the cattle was right at 69%.
Optimium cutability ( ie DP and Yield ) is only achieved by a high relative muscle thickness as compared other relative body masses.
Those other masses are external fat cover, seam fat existence, and skeletal mass.
