That's a lot to unpack and try to answer.

First let me congratulate you on your business success! And welcome you to the "ag world" it can be very rewarding caring for your animals.

Next, I'll warn you that the venture you want to pursue is fraught with difficulties. Many of them you already have an idea what they are, like predators and disease issues. But then there are calving issues, or like Russ was experiencing where cattle just fall over dead.

Get "beef cattle" since you're looking for food security and to possibly grow it into a business. I have primarily black cattle (Angus base but crossed with several of the European breeds).
Stocking rates vary by area. Mine is 7-10 acres per "pair"(cow and her calf til weaning). Some are as low as 1/1 or up to 1/100's in the desert lands. Your number of 3-7 seems reasonable to start.
