Do I need to supplement the pasture in the spring or summer?

If the grass has good nutrition, then you shouldn't need to. I cube my cows randomly during the grazing season, maybe once month, just to keep them coming to a bucket or sack so they're easier to catch and work.

If you're serious about making this work, then get the right tools. Don't try to haul cattle in the dump trailer. If you're lukewarm about just how deep you want to get, then maybe a pair of steers to feed a few months and take to the butcher is the ticket.
