How thick, is thick and what fertilizer do I need? I assume nitrogen but how much.

Go easy on the nitrogen because if it turns of drouthy, it will accumulate nitrates in the stalk. At least the sorghum Xs will. It doesn't need much anyway, it is known for doing good on poor soils. A little chart I have says it will use 40# N, 15# P, and 58#k per ton harvested. Those all sound high, especially the N. I'd say 50-80# N for a typical crop would be plenty.

10-15 lbs seed to the acre with a drill is pretty standard out here, that would be around 200k per acre.

Cutting at 3' is fine, actually better. The more leaf the better the feed.
