I'll agree, I normally hate added onto farmhouses, but the ones I've seen work and worth the effort have been two story additions to a ranch house. The effort and expense comes from the interior finish, not an extra few feet one direction or the other, the air is free. If you're considering a major kitchen remodel, consider making the old kitchen a mud and utility room mostly as is, and putting making the new kitchen in all new construction, avoid the demo expense and the added cost of putting the most expensive per square foot space in the hardest space to make it work. Same with a major bathroom remodel. Sorry, no help with sizing or your other questions.
