When we have fish or something we want it with wife just makes up a small batch in a dish, enough for the two of us.

Like you say, mayo or Miracle Whip or whatever a person wants for the base. A teaspoon or table spoon of pickle relish (used to do sweet, now that low carb use dill pickle relish), a squirt of mustard and mix it up.

The mustard is made of vinegar and mustard seed. The vinegar in it give it the little bite the tartar sauce needs. The yellow color give it I nice color that makes it look like something other than mayonaise.

I've even done a small personal batch right on my plate before I sit down to eat. Proportions of each can vary widely according to taste.
