Wife uses bacon grease in her home made mayo. Says she has not tried butter but should also work. We eat so much bacon having bacon grease available is usually not a problem.

Growing up and working age I always loved Miracle Whip on sandwitches, deviled eggs and such. But it is made of soybean oil and we no longer eat that. So now when she makes stuff calling for mayo she just makes her own. Even the ones in the store that advertise "olive oil mayo" if you read the ingredients, the ones we have in the stores around us still are mostly soybean oil. I guess they just add a little olive oil for taste. Kind of fake labeling as far as I am concerned.
