We use butter to make our faux Miracle Whip. We did use bacon grease too, but we haven't had bacon since my first "heart" episode 8 years ago. Now, after the 3rd one, knowing it was really inflammation in my shoulder we have not gone back. We use pastured only + a cup of whole oats a day, dairy from my goats and very little extra virgin cold pressed olive oil. No plant oils. I have never been able to do soybean oil. No lard.

We use to make our own bacon but we ate pork then. Got tired of sourcing good bacon without chemical cure. Made our own using celery for years. Just not worth it anymore. + the salt. When I get a hankering 2-3 times a year, I get a small bacon burger or club sandwich. None in the house so rarely. We do get a small package of "real" bacon bits once or twice a year for a special salad or to flavor green beans.

On a whole food, no processed diet. Lots of fish, a little pasture raised red meat, mostly elk and venison. Home grown fresh produce. No more problem for 5 years now.

I really thought I was having a heart attack, went to the ER. They thought they saw a shadow on my heart, or something. I think when I mentioned "could it be a heart attack" they saw something alright. After they knew I had insurance, they thought, lets throw some money at the hospitals new pencil necked "heart specialist". First thing, he says "Do you know when you had your heart attack" I did all his tests and when he couldn't find anything, he said "with your history". I said send your results to my doctor, he said "he will just defer to me". I told him to send it. He prescribed meds, I never did. I was put on a very strict diet and sent to a dietitian after the 3rd time. She said she thought it was inflammation and stress after looking at my chart. Have had heart checkups and tests every year since, Nothing shows and no change in heart function. Anyway, diet change was good either way....James
