You're right, dairy is not a beef breed. The availability of cheap steers makes dairy breeds popular to feed out. It just so happens that the meat turns out to be just as good as anything I've ever eaten. Maybe it irritates some that Holsteins are such a common sight in feedlots but the reality is that many are making money doing it.
