There may be little or no difference between the beef from properly finished Holstein and beef steers but I suspect there could be a big difference in how beef and holstein breeds manage out in rough pasture and weather.  The biggest differences then may be in how they manage in different environments? And maybe efficiency (beef output per unit of input)?  The Holstein is bred for efficient milk output. The beef breeds are bred for efficient beef output.
