I have heard that properly finished, Holstein steers are better meat than most beef breeds, just the conversion rates are lower. A college roommate of mine had a feedlot, commercial beef cows, purebred Simmental herd as well as sheep, but said that if he had a small slaughterhouse that had retail sales, he would start to finish Holstein steers for it.
