moderate your cow size, increase feed efficiency, and increase marbling amounts and consistency, a 1/4 Jersey x 3/4 Angus cow is a good way.

As you likely know eddie, Jersey is in fact thee highest marbling breed type in the usa. ( Red Angus is 2nd, Black Angus 3rd btw., ie source is MARC @ Clay Center, NE ).
