There are real differences in genetics in bulls. Some do a lot better on grass than others. I personally like the idea of putting as many pounds as I can on a steer on grass then put a bit of corn in him for 120 days or so prior to processing. 

I think a steer that can put pounds on with mama's milk & grass seems to also be able to put pounds on in corn.  My largest calves at the time take them off mama, grass and then hay and put them ON corn also tend to be the largest calves coming OFF of corn and going to the processor.

I am not sure the reverse (corn gainer genetics on grass) holds true.
