It seems to me from my travels that we really have a lot of un used or under used grass in the USA. We could also dramatically increase the carrying capacity of much of our grassland with different grazing methods such as rotational grazing. Loran, I agree that Americans prefer corn fed beef. I certainly do. I am not a beef expert but it seems to me that beef may not need as much time on corn as we have been giving them in order to develop a corn fed taste. We have traditionally used visual marbling as the primary criteria for corn fed beef quality. I see from my own recent experience is that it is possible to have tasty, tender beef without quite as much visual marbling as is traditional.
