Their operating costs/margins are of huge relevance to the supply chain. They provide a market, take on all of kinds of risks. Is a farmer capable of performing all the functions of an elevator? I will agree that some large producers with several employees could basically run their own elevator, but for the smaller, family farms made up of fathers and sons, I think it would be almost impossible for them to replace the local elevator.
