When we get beef cut, we usually get the better steak and roasts some stew meat and the rest hamburger. If you are new to this way of handling meat, get smaller packages, the roasts around 3 pounds (it will depend on the animal how they cut out), and the steaks get them one to a package (if you need more, just take more out of the freezer, and then you don't have to thaw 2 frozen steaks out to get one, and then have to use the other one the next day. I usually get ground beef in 1 pound packages, same deal if you need more take 2. Your ground beef will likely be fairly lean, especially if you put some of the poor roasts/steak in because there won't be a lot of added trim like the stuff from the store. If you are going to share with family, get it done in split sides when processed, basically this means they take the half, and as they cut it up, one piece goes in box A, one piece in box B so that you have 2 quarters, but they are mixed so no one gets all front or all hind. If you think there is any possibility of sharing meat by the quarter, get it cut that way off the start, it is MUCH easier than trying to sort it later (BTDT) Your animal will likely give you a hanging weight of around 700-750 lbs and about 500 lbs of meat if you debone it. It will likely be about 13 boxes about the size of a 24 box of beer.
