You might consider getting the butcher to package up some of the lesser cuts as stew meat. You will get a lot of hamburger in relation to the steaks, roasts, etc. A nice pot of beef stew goes well with winter weather and those tougher pieces of meat will be fork tender after cooking a couple of hours in the stew pot. JMO
