Depends on yuor family size. We like 3-5 lb roasts, feeding a family of 5, with leftovers. Your butcher should be able to guide you through it all. How thick do you like your steaks? How many per package? etc. We had a beef done last fall, and it filled the freezer all right. I only ordered 2 boxes of beef patties, thinking bbq season was pretty much over. We have since gone through both boxes. The kids like to make them for a quick meal or when I'm not home, so next time I will order more. Ground beef usually goes in 1 lb packages, it works best that way for most recipes. Personally, you can never have too much ground beef, very versatile.

Our butcher tenderized some steaks, and called them minute steaks, those are great too. I always save the tenderloin cut for father's day, those are d-e-l-e-c-t-a-b-l-e on the bbq. There's nothing like your freezer full to brimming with home raised beef!
