So the elevator is running storage as their business, the only way to pay for those facilities is through storage $'s and not losing it on gambling.   They don't have crop standing out in the field that is at risk of weather.    

On the farm storage is just a part of the business that is often necessary in order to facilitate harvest much the same as the combine, grain cart and trucks.   Even if they bins themselves don't make a dime they can still be paid for through harvest efficiency/timeliness (getting the crop off the field before bad weather). 

That does not take away from needing to market the crop before and/or after it is in storage.
