I've done a couple but they never really turned out. I pickled one, didn't care for the texture and another I boiled but don't remember much about it other than it was tough. I've watched a few you tube videos and everyone raves about using then in tacos. I think they may put them in the crock pot after boiling and removing skin. I've always gotten the tongue and heart back from our beef and usually ended up grinding for the dog. No dog anymore though so maybe I'll try one for tacos.
