I would like to use the 70-30 for higher fat content. But too much of it renders out at cooking time so wife does not like to use it as well. We avoid the lean hamburger but the 80-20 seems to be her sweet spot for high enough fat for good taste but not so much that ends up grease in the pan or on the charcoal.
