Subject: meat loaf

Wife uses crushed up pork rinds, eggs, diced onions, salt, pepper and any other seasoning a person likes for meatloaf. The pork rinds adds filler so the meat is not so dense and the eggs holds it together so it will slice nicely.

Onions are her weakness. They are medium in carbs but she likes the taste and does not use them in huge amounts.

I really like her meatloaf. She often adds Italian dry herb seasoning also.

For a topping to avoid ketchup because of the sugar. Some tomato paste if a person wants that flavor, but has some carbs. We like mustard and/or bacon. Bacon adds flavor and some fat.
