New Castle, PA | Here is something I do about once a week for breakfast, low carb , high fiber with protein . Cut a zucchini in halve length wise and scoop out the seeds . Brown some sausage in a skillet , sweet , Italian , hot , whatever you like .Chop up a couple mushrooms , half of a sweet pepper , and some sweet onion throw in with sausage and brown. When it all gets browned ,remove from heat and add some shredded cheese , we use mozzarella , but use whatever you like. Mix cheese in with sausage and vegetables then stuff seed cavity of zucchini with mixture . Bake in oven on 350 for about 15 minutes . If you really want to kick it up a notch , wrap the stuffed zucchini with several strips of bacon before you put in oven | |
