Rob, I would just add a word of caution in whatever changes you make. A reputation for selling quality is hard to earn and easy to lose. 

Personally I would just keep doing what you are doing for most. Maybe take a couple steers and try a different feed system have them processed for yourself and your family and see if you can tell a difference before you sell them. Do a side by side taste and texture test yourself.

I have a similar situation - people calling looking for another quarter. I was thinking about processing a carry over steer off of grass this summer but it would not be the same beef as their first quarter coming off of grazing corn.
