I really hope you will be lucky grafting/budding that apple tree!
You might wish to find out which variety it really is.
"Here" each fall the german pomological society will offer opportunities to have fruits and branches examined and defined by an expert. A quick google search brought up there is such a society in the U.S. as well - you might contact them.

There are virus diseases that may be transmitted by grafting, your old tree might overgrow them but they might affect the results of your efforts. So it might be interesting to purchase a tested tree of the same variety from a nursery and compare.
