These are just a few randon thoughts as I have thought of this before but have also been out of the livestock business for four years now. One advantage/disadvantage depending on how you look at it is that pork, poultry and pretty much dairy can produce cookie-cutter animals(products) in mass quanities which fit into industialized production systems on a retively small amout of land.

Imagine trying to get every cow-calf operation from the Ohio River south to produce a calf crop with identical genetics. I don't think it could be done. Also look at the number of acres in the USA and Canada devoted to cow-calf operations. Pretty hard for the major meat packers to control the beef industry from conception to consumption(yet).

There will be a livestock industry for the little guy as long as there is a buyer for that product.
