| "Here" we always skinned the hogs anytime I was involved. Back in the old days they used to scald/scrape. A neighbor who was good at it used to butcher beef, pork, and occassionally lamb at our place. We also did chickens and a few turkeys. A lot has changed in the last 20 years. Now I just haul beef to the locker plant in town and don't raise pork, lamb, or poultry on the place anymore.
