We did nine of them this year and last year did 11, alot of work but if you have good help it goes fast,we have our own band saw and meat grinder, this year I bought a 18volt cordless sabersaw to split the hogs when slaughtered and it worked great. Nice pics, you must scald your hogs, we skin ours. Do you have a large tank to put the hogs in when scalding?Nothing like homemade sausage and fresh cuts of pork. We dont render the lard anymore but when I was younger I remember them do it.Terry
