I'd sure go with 200A.
Electricity use goes up fast when you start doing shop projects. With the kids helping, we might be running a welder, plasma cutter, and angle grinder all at the same time.
Also, there may be a day when your plug in pickup gets parked in the shop. I think some of the fast chargers take like 60A just by themselves.
