Slaughter plants like Perry probably do virtually all prime cuts and some subprimal cuts. More of commodity business than prep for retail. Toured a plant one time and walked past a giant cardboard tote of pig eyeballs. I don't even remember what the guy said they get used for anymore. I do recall they did the same with hog pancreases to make insulin.
Everything off of the hog gets used.
Few years back while touring a plant we walked past a tote that was getting filled and the guy leading the tour said that tote contained the highest $/lb “cut” off of the hog. It was full of bungs. Apparently it’s a delicacy in some export markets.
As for labels, there’s only 5-6 packing companies that control 95%+ of the pork market. They all package product for dozens of labels. |
