Eastern Iowa | They absolutely do that, but probably more so in plants that add value by further processing raw product. Slaughter plants like Perry probably do virtually all prime cuts and some subprimal cuts. More of commodity business than prep for retail.
Toured a plant one time and walked past a giant cardboard tote of pig eyeballs. I don't even remember what the guy said they get used for anymore. I do recall they did the same with hog pancreases to make insulin. | |
