Lots of 'full time' farming operations around here driving 10 year old pickups as their 'good' one, with machinery from the 90s, who don't get more than a few days vacation a year.

Much of the difference is generational. Each new generation builds upon what the previous has built.
People can look at a well to do farming operation and go on about how much money they have, and how well they live, but that family likely was farming since before Henry Ford came up with the Model T, and are reaping the rewards of years and years of building up the business, often while living very frugally.
My newest pickup is over 20 years old, most of my equipment is from the 80s and 90s, and I live fairly cheap. However, things are on track for my kids to have a better life than me. I could point out where the farmers lived that had a new car every 2 or 3 years, and took nice vacations every year, but they are now abandoned farmsteads because when they quit, there wasn't enough left for their kids to continue on.
