MY wife has had gestational diabetes her last two pregnancies. Too few carbs causes almost as much trouble as too many carbs. Diet needs to be balanced. Some carbs are worse than others it seems. Eggs and toast seems to work well for her. Eating only carbs or only protein at one time also seems to cause a blood sugar spike.
