John has great advice, let me ad this too:

Most Carnivore diet gurus say that your blood numbers might be pretty erratic when you start, but get pretty steady after six months or so.

For "annual blood tests" the magic number of fasted hours is 14, with only water until the test.

Some folks have higher trigs when they drink black coffee.
