Yes, that is a good way to make a passable crust. I think somewhere on the last couple pages of Kitchen Talk I put the recipe for a chicken crust. Our friends made that for us the first time and it was excellent.

We tend to be beef and pork eaters rather than chicken (chicken used to be one of my favorites, but not so much now) so we just like the crustless pizza just as well.

But you can feed normal people (non low carb people) the chicken crust pizza and even they will like it just fine. Can pick it up by hand and eat it like normal pizza.
