You should be fine with that gear ratio. If you are new to semi's, remember rule #1 about pulling out of a field with a full load: Use as little throttle possible to get you going (taking off at idle is best). If you rev the engine before dumping the clutch, either you will burn the clutch, or parts will break (drive shaft, power divider). Again, with your 11.19 1st, and 3.73 rears, you are geared plenty low to get out a field. When empty and on pavement, you can start out in 2nd or 3rd.
