As far as NDVI goes it's cheap, accurate way to view your field and give you the ability to address some of the variabilty. You're right about it's limitations, but generally an NDVI map and good GPS can really allow you scout out, take tissue samples or whatever, and can give you the ability to address any nutritional problems that may have been overlooked. We also used it this year to tidy up our final N application on Wheat and Canola.
The variation in biomass in our NDVI maps @ Z31 in wheat is generally N related, unless a dry year then it is simply soil depth and pH.
