Subject: beef carcass 1/4 weight question



Lancaster County, Pa.

I have a freezer beef customer who wants to buy a hind quarter.  If a half were priced @ $2.30, what would be a reasonable price for just a front or hind quarter?  Also, how would the weight be split between the front and hind quarters?
