You can't treat a holstein like a beef. They are bred to milk not put on weight to butcher. Last spring my calves ate what grass was in their chain reach but otherwise it was milk replacer and grain. After weaning, they had all the grass they wanted in my pasture along with plenty of grain. Did not have any health problems. This falls group were just getting weaned when we got our 10 inch snowfall in early November so then we added a little hay, but they were eating grain very well by then.
My FIL tried rainsing the holsteins like his beef, no grain at all, but it does not work nearly as well as with beef. He grass finishes his beef. Holsteins get raised in the old dairy cow lot and sold a 400 pounds.
